Early Saturday Mornings June 5, 2010

Early Saturday mornings are my favorite time of the week.  Dave sleeps in until 10 or 11 am and the house is quiet.  It is just me and the Lord and it is oh so sweet.  I usually enjoy a few nice cups of coffee, listen to worship music, journal, exercise and then….plan for Saturday morning breakfast.

Dave really loves waffles.  For his birthday his mom sent us our first waffle iron and since then I have been trying to perfect a waffle recipe.  As I tried and failed many times we invested in Belgian Waffle mix from Fresh Market and Dave loves it.  I think it has a weird after taste and am now determined to find a homemade recipe he loves.  This morning I am attempting Simple Yogurt Waffles (we have some extra yogurt to use up so why not).

1 c. water
1 c. yogurt
2 eggs
2 c. flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt

In a medium/large bowl, combine the water, yogurt, and eggs. In a smaller bowl, mix together the remaining (dry) ingredients. Add dry ingredients to wet, and stir to combine. Bake in a waffle iron (according to the directions that came with the appliance).

Off to the kitchen I go!!!

 

A Rainy Day May 31, 2010

So Memorial Day turned out be a rainy day. Our plans for tubing down the Dan River went out the window and plan B came into action. It was a day of just enjoying my husband, relaxation, and of course…cooking! Dave is usually the cook in our house as my track record is not the best, but as we had extra time on our hands, I thought I would give it a try.
The menu- Pesto Bow-tie Pasta with Chicken and Rosemary Biscuits

Thanks to Chad, my new deck has an amazing herb garden along the side of it and my basil is growing like it is on steroids. Pesto was in order to use up as much as possible because little white flowers were starting to bloom on the basil. I found a recipe at http://simplyrecipes.com/recipes/fresh_basil_pesto/ . It was the perfect blend of basil, pine nuts and garlic. I highly recommend it. And the rosemary biscuits were easy, light and fluffy (http://allrecipes.com/Recipe/Rosemary-Biscuits/Detail.aspx). We ended the meal with a bowl of chocolate reese’s ice cream from Homeland Creamery http://www.homelandcreamery.com/ that you can now buy at the local Reynolda Fresh Market. Delicious.  For once Dave ate everything that I made without turning up his nose (he actually never does this, and is far more willing to eat my food than I give him credit for) and even went back for seconds.  This does not mean I am taking over the cooking, but at least I have conqueored one meal.  And now to end our rainy day….a movie!

So I have tried blogging in the past and given up but feel an excitement to start again.  My life is very ordinary yet extraordinary in Christ.  In the past I wrestled with what to publish on my blog but I decided that this blog will be a little bit of everything.  I love Jesus, food, exercise, gardening, etc.  I think it will be a little bit of everything I love.
